Stuffed Pork Chops
Ingredients:
- 2 thick (IOWA) Chops
- 8 oz pork sausage
- 2 tbs butter
- 1/2 cup onions
- 1/4 cup celery
- 2 tsp fresh or rubbed Sage
- 1/2 tsp salt
- 1/8 tsp fresh ground pepper
- Simpson Spice Shop Dry Rub
Instructions:
Heat butter, onions, and celery until tender in a frying pan.
Add Sage, salt, and pepper. Let cool and mix with pork sausage.
Carefully cut pork chops thru the middle length-wise, stuff sausage mixture in the middle and tie with cooking string or wire so sausage stays in the pork chop. Generally coat Chops in Simpson Spice Shop Dry Rub. Grill about 10 minutes till Chops have grill marks. Take off direct heat grill an additional 25 to 35 minutes.
Serve with Mediterranean Cauliflower Rice and baked sweet potatoes.
